“Kneading the Dough” is our theoretical and practical workshop on amasijos where we want to pay homage to a food that has been a part of our communities for generations. It is a space of love, respect for tradition, and the transmission of knowledge.

Amasijos are food products made from flours, where hands play an important role in their preparation. Grandmothers speak of the warmth of the hands when kneading as fundamental to achieving a good result. I see it as the warmth of love that seeks to nourish.
